I have discovered a really convenient way to save my summer herbs like celery, sorrel, etc. I can simply dehydrate them until they are totally dessicated and then pulverize them in a coffee grinder (that I only use for herbs) and save them in jars with tight lids. This will allow me to add them this winter when I make a batch of vegetable soup or even a stew. I can simply sprinkle some summer sunshine in the form of celery powder or sorrel powder on the top of a bowl of soup adding vitamins and flavor at the same time. This would work well with carrots and peppers too adding a rainbow of color as well as flavor and nutrition.
