A Sweet for your Tooth

I found this lovely sounding pudding at SweetOnVeg.com and thought I would share it:

Raw Chocolate Avocado Pudding*
Time: 10 minutes
Makes: 2-4 servings
Equipment: blender or food processor

2 medium avocados
1/3 cup maple syrup or agave
1 tsp vanilla extract
1/3 cup cacao powder
2 TBLS mesquite powder
1/3 cup water or coconut water

Blend all ingredients, add water for desired consistency and serve immediately.
I will personally not use agave anymore, so I would try the maple syrup or raw honey and I am not adding the mesquite because I don’t have any in the house. However, the nutritional information on mesquite powder says it adds a sweet nutty taste to food, is high in fiber and helps balance your blood sugar. I think I will order some and use it the next time I try this yummy but healthy pud.

    I enjoyed this sweet, chocolaty pudding. I didn’t add the mesquite powder or agave. I used buckwheat honey for the sweetener and the texture was thick and the taste was sweet.
